Prep & Marinate
- Pat ribs dry and remove the membrane from the back (optional but recommended for tenderness).
- In a bowl, combine all marinade ingredients. Rub generously over ribs.
- Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor.
Slow Cook for Tenderness
Oven Method:
- Preheat oven to 300°F (150°C).
- Place ribs on a baking tray lined with foil, meat side up.
- Cover with foil and bake for 2–2.5 hours until tender.
Instant Pot Method:
- Place ribs on a trivet with 1 cup of water in the pot.
- Cook on high pressure for 30 minutes, then quick release.
Make the Spicy Glaze
- In a small saucepan, combine all glaze ingredients.
- Simmer over medium heat for 5–7 minutes until slightly thickened.
Glaze & Finish
- Brush the ribs generously with glaze.
- For sticky caramelization, place under a broiler/grill for 5 minutes or on a hot grill for a smoky finish.
Tips & Variations
- Sweet Heat: Add pineapple juice to the glaze for a tropical twist.
- Smoky Heat: Use chipotle powder or adobo sauce for a deep smoky flavor.
- Extra Crispy: After glazing, let ribs bake uncovered for the last 15 minutes.
