Spicy Spare Ribs Recipe

Prep & Marinate

  • Pat ribs dry and remove the membrane from the back (optional but recommended for tenderness).
  • In a bowl, combine all marinade ingredients. Rub generously over ribs.
  • Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor.

Slow Cook for Tenderness

Oven Method:

  • Preheat oven to 300°F (150°C).
  • Place ribs on a baking tray lined with foil, meat side up.
  • Cover with foil and bake for 2–2.5 hours until tender.

Instant Pot Method:

  • Place ribs on a trivet with 1 cup of water in the pot.
  • Cook on high pressure for 30 minutes, then quick release.

Make the Spicy Glaze

  • In a small saucepan, combine all glaze ingredients.
  • Simmer over medium heat for 5–7 minutes until slightly thickened.

Glaze & Finish

  • Brush the ribs generously with glaze.
  • For sticky caramelization, place under a broiler/grill for 5 minutes or on a hot grill for a smoky finish.

Tips & Variations

  • Sweet Heat: Add pineapple juice to the glaze for a tropical twist.
  • Smoky Heat: Use chipotle powder or adobo sauce for a deep smoky flavor.
  • Extra Crispy: After glazing, let ribs bake uncovered for the last 15 minutes.
