- 2 tbsp vegetable oil or ghee
- 2 large onions, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, minced or grated
- 3 tomatoes, chopped (or 1 can diced tomatoes)
- 1 cup plain yogurt (room temperature)
- 2–3 cups beef or lamb stock (or water)
Spices:
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 tsp turmeric powder
- 1½ tsp garam masala
- 2 tsp paprika
- 1–2 tsp chili powder (adjust to taste)
