- 2 medium potatoes, peeled and cut into small cubes
- 2 tbsp olive oil
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup broccoli florets
- ½ cup chopped onion
- 8 large eggs
- ½ cup milk (or cream for richness)
- ½ cup shredded cheddar or mozzarella cheese
- 1 tsp dried oregano
- ½ tsp paprika
- Salt & pepper, to taste
For the Creamy Yogurt Herb Sauce:
- 1 cup plain Greek yogurt
- 2 tbsp lemon juice
